Avocado Goddess Dip

The perfect accompaniment to roasted veggies, such as cauliflower, carrots, broccoli. A staple in my refrigerator. Keeps one to two weeks.

Ingredients

1 large avocado

1 large bunch parsley

1 tbsp minced garlic

1 tbsp champagne vinegar

1/2 cup extra virgin olive oil)

1 large lime, juiced

1 tbsp za'atar

1/2 tsp salt


Instructions

PREPARE INGREDIENTS:

  • Pit and scoop out the avocado.

  • Wash and roughly chop the parsley

  • Mince the garlic.

  • Juice the lime.

BLEND:

In a blender or food processor, combine the avocado, parsley, garlic, champagne vinegar, oil, lime juice, za'atar, and salt.

Blend until smooth and creamy.

TASTE AND ADJUST:

Taste the dip and adjust seasoning as needed. You may add more salt, lime juice, vinegar or EVOO, according to your taste and consistency preference.

SERVE:

Serve immediately or store in an airtight container in the refrigerator for up to two weeks. This dip pairs perfectly with roasted cauliflower or any other vegetables.

NOTES:

  • You can thin out this dip with more juice, vinegar and evoo to make a salad dressing.

  • Always use organic, high-quality ingredients for the best flavor.
